In a small jar fitted with a lid, add oil, vinegar, honey, mustard, orange zest, salt and ground red pepper. Shake until honey is incorporated. Scrape bottom of jar with a small rubber spatula to help incorporate honey if necessary.
In a large bowl, combine fruit, Gouda cheese and parsley. Pour honey Dijon dressing over the fruit mixture. Toss to coat. Sprinkle with nuts. Toss and serve.
