Smooth, creamy Derby cheese marbled with a delicate Sage infusion. Derby is a semi-hard cheese with flavour and creamy ivory to a rich yellow pate. Traditional Sage Derby has an open texture with a smooth creamy body and a nutty flavour. This cheese is a ‘vat-made’ cheese, which involves the Sage being added to the cheese-make. It has smooth melting characteristics that pairs with everything from fresh fruits, vegetables to poultry dishes.
Sage Derby is thought to date back to the 17th century when cheese makers began adding sage to cheddar because of its health benefits. It is similar in taste to a mild cheddar but when speckled with the aromatic herb sage, the cheese takes on a very different flavour.
