Macedonia of Fruit with Honeyed Feta

Ingredients

  • 3/2 Cups orange Juice, Fresh Squeezed (About 6 Medium Oranges)
  • 1/3 Cup Sugar
  • 2 tbsp. Anise Flavored Liqueur
  • 1 tbsp. Fresh Lemon Juice
  • 1 Cup Plums, Diced
  • 1 Cup honeydew Melon, Diced
  • 1 Cup Cantaloupe, Diced
  • 1 Cup Mango, Diced
  • 1 Cup Rasberries, Blackberries or Pitted Cherries
  • 1 PKG. (7 oz) Athenos Feta Cheese, Crumbled
  • 6 tbsp. Orange or Lavender Honey
  • 6 tbsp. Pine Nuts, Toasted

Preparation:

  • In a large bowl, stir together orange juice, sugar, liqueur and lemon juice until sugar is dissolved. Add peaches, plums, honey dew, cantaloupe and mango and stir gently. Cover and shill 2-3 hours.
  • Gently stir in berries. Spoon into 6 shallow bowls.
  • In a microwave oven or over low heat, heat honey just until warm. Sprinkle cheese onto fruit, then drizzle cheese with honey and sprinkle with pine nuts. Serve immediately.
    TIP: 1) the anise liqueur is a perfect match for the tanginess of the Feta and the sweetness of the toasted pine nuts and honey. However, if you prefer, brandy, grappa or orange liqueur can be substituted. 2) The quality of the ingredients is the key to this recipe. Don't even think of using anything less than perfectly ripe fruit and fresh orange juice. The honey should be fragrant, and the Feta must be the best - made with sheep's milk and imported from Greece
