With its moderately firm and sliceable texture, Rogue Creamery’s classic Northwest-style Jefferson Cheddar is nutty and sweet, with a subtle tangy finish. Aged versions exhibit a more crumbly and crystalline texture.
As cheddar ages, it develops the distinctive “sharp” flavors and grainy texture. Rogue offers Jefferson Cheddar in two different styles: Mild (aged a minimum of 30 days), and a sharper version, 1 Year (aged a minimum of 365 days). Gluten-free. USDA Organic.
