Rogue Bluehorn Blue Wedge
Offering a rich, buttery taste and smooth texture, this blue cheese from Bluehorn is ivory, with green-blue veins of mold throughout the interior. The rind is grey-brown with hints of pink.
By soaking each wheel of cave-aged blue cheese in an organic red wine blend, Bluehorn creates a cheese with distinctive berry notes and a brown butter finish – in addition to a subtle rose blush coloring on the rind.
Currant, blackberry, blueberry, and brown butter, with moderate “blue” flavor.
Try pairing this cheese with cranberries and cherry sauce for a special experience filled with a mixture of sweet and sharp flavors.

Bluehorn Blue is also a wonderful accompaniment to steak, pork loin, or duck confit drizzled with a bordelaise sauce. Because of its convenient, attractive size, Bluehorn Blue is a perfect centerpiece on a cheese platter, surrounded by nuts, fruits, and charcuterie. Bluehorn Blue pairs excellently with a variety of red wines, including Syrah and Pinot Noir. We also enjoy it with dessert wine, especially Ruby Port. With flavors of caramel, vanilla, and cream, wheat ales and porters will complement this cheese as well.
